To make, assemble sliced fennel, grapefruit, arugula, pecans, some lemon juice, salt, pepper & olive oil. Tasty and easy!

Costa Rica-Uvita

Ben and I took Naomi Porper‘s great advice and made it down to Uvita at the end of our trip. Not only did it prove to be one of the more beautiful places I’ve been in the world, but the beaches were so free of people that we felt like it was our own private paradise. I hope you enjoy this final Costa Rica post!

Roasted Beet Salad

Taking a break from the Costa Rica photos for a food post. I recently came into possession of some farmer’s market fresh beets and chef extraordinaire Rachel Levy recommended roasting. I threw together this salad for a delicious lunch.

First, roast 7 small beets (washed but unpeeled) in foil at 400* for 45 minutes. While warm, peel beets and slice for salad. Drizzle with oil, salt and pepper and add to the following ingredients:

baby spinach
chopped red leaf lettuce
a few sprigs parsley chopped
halved pecans
crumbled goat cheese
pickled red onions

I made a honey-balsamic dressing (makes a lot but here are the proportions):
¼ balsamic, tbsp honey, tbsp Dijon mustard, 1/3 c e.v.o.o., half tsp kosher salt, half tsp fresh ground pepper

You should consider making a pie. It’s really a lot of fun. Inspired by this pie from eatmakeread (and pretty much using her recipe, swapping out fruit types), I made these two fruit pies for my family – a blueberry and a cherry. We paired ‘em with vanilla ice cream and they tasted just like summer…

Colorful Summer Food

Since leaving my job and moving back to the ‘burbs, I’ve had two things I never did in the city: a grill and a family of five to taste my dinner experiments. I spent a good part of July 4th weekend whipping up various vegetarian items (to accompany steak one night and salmon the next).

Highlights from some of the more beautiful dishes below.
